Because Easter comes from a much older pagan holiday celebrating fertility, spring, the new crops, rebirth, etc. Both rabbits and eggs are pretty good symbols of fertility. The word easter comes from the latin estrus, too, the same place we get the word estrogen from.

Baxter is right!! A rabbit is the apitamy of fertile!! It comes from old fertility rites!! So, how is everybody doing??

Turtles too.
A girl by the sea name of Myrtle
once amused herself with a sea turtle
and what was phonomominal,
a swelling abdominal
reviled that the turtle was fertile.
