I believe my tappet covers are leaking. How difficult a job is this? Do I just need to remove the carbs and the exhaust?

Here are some pics. It is wicking down to the oil pan - no drips but it sure looks nasty. I am concerned about my oil pan falling apart due to corrosion. Is this a project I should not put off?

I will probably use Basil Adams set of gaskets.

Yes, remove carbs and exhaust header to do the job correctly.
Front cover uses a flat gasket. Rear is a "captive" rubber one.
Get the bolt seals as well. And clean out the oil strainer in the front one before assembly. You'll also need a manifold/header gasket too.

2 ft lbs torque. Notorious for leaks when overtightened.

shoot mine is a veritable river of oil...

DPO tightened them til they are concave.

I think a tribe of cavemen are living in the front one.

Actually I have oil loss down to about a quart every 1000 miles and i still believe mt biggest oil losing point is the blowby road vent. That is next then the side covers become my oil concern... Dislike the thought of tackling the exhaust / intake since they are the only things that ARE sealed under the hood.
