Jack,
If your replacing carbs, you should do the air/exhaust manifolds, exhaust and gas tank all at the same time since you'll have to have all of it down at the same time. I would pull it all, replace the gas tank, then put in the new manifolds, carbs, exhaust, muffler. While its still up, do the rear bushings. Just my two cents.

Jack, the above sounds good, but as a rubber bumper owner w/ SUs, I have to tell you, it's far from bolt-on to go twin SUs. Bodywork mods are necessary unless it is a right-hand drive car. Here is an excellent link: http://www.visn2.com/Flash%20Website/Carbs_for_1500.html

Without specifics, I recommend:
1. Get it running really well with the setup you want. Weber, Su, whatever manifolds etc...
2. Get it driving the way you want. Suspension, steering, tires etc...
3. Work on the cosmetics.
