I think its about time to change out the ZS carb for a Weber DGV. I reember someone had new kits for a lot less than Moss, VB, etc., but don't remember who.
My main question is which of the chokes is best - water, electric, or manual, and why. Its going on a 78 that is otherwise stock, just want something a little more maintenance free.

I like the elect. choke because it is much easier to install. Just use the green wire that went to the induction heater on the stock manifold and your in buisness. It also lets you clean things up by getting rid of all the pluming that us for the water choke. Kind of a set it and forget it deal. The place that I have seen the conversion kit cheaper is the Bee Hive in Clemson, SC.http://bhive.tierranet.com/index.html
I just did the conversion and used the electric choke. Like Tom said - just use the green wire from the original induction heater. Check it to be sure it has power when the ignition switch is on. I purchased mine from ---
www.webercarburetors.com ---- complete kit - carb, manifold, linkage, air filter and gasgets for carb. When I bought it recently it was $289 including shipping. You will need a manifold gasget.

I have electric on one, manual on another, and both are fine with me. I'd probably go electric again though.
Let's not forget, you'll need a different exhaust manifold too. Either a stock one, '68-'74 or headers will work. The current Zenith intake/exhaust manifold is one piece.
